What kinds of flowers can be candied?

For example, could you candy lavender flowers?

I know that violets and roses can be used, but I wanted to know what choices I have when it comes to making these dainty little treats.

What kinds of flowers can be candied?
Apple or plum blossoms, borage flowers, lilac florets, rose petals, scented geraniums, violas, violets, Johnny-jump-ups, pansy petals, and, yes, lavender!

Reply:Squash blossoms are often "frittered" and eaten so they should also be able to be candied.
