How is lavender used in cooking?

Culinary:



Flowers and leaves are used in flavored vinegars, jellies, syrups, sugars and can be used in small quantities in salads.

Steep fresh or dried flowers to make a highly aromatic tea which aids digestion and calms nerves.

Add dried flowers to batter for cookies, cakes and other cooked confections. Use fresh flowers to decorate desserts and sprinkle on top of fresh fruit.

How is lavender used in cooking?
Lavender is a member of the mint family and is close to rosemary, sage, and thyme. It is best used with fennel, oregano, rosemary, thyme, sage, and savory.



It has in addition to a flowery taste, a slightly citrus tang like lemon.

Reply:I think you can use it to flavour sugar ie like icing sugar by leaving the lavender to infuse for a few days. I think you can cook with it in buscuits and cakes too
Reply:When I was a chef in Canada, I used in in a herb mix from France called "Herbiers de Provence", it is a mix of herbs fro the south of France were lavander grows in gardens and wild, it can be used in baking and have had ice cream and sorbet made from it.



Dried it can be used in cooking or as a room freshener, they use in in an oil form for perfume, the french lavander is more fragrant than the English variety.



It can be strong so limit is use to a small amount, it is nice but you want to taste the food not lavender.
